I love snacking and while I've managed to find healthy alternatives for most cravings, almonds & carrot sticks can't replace the satisfying salty crunch of a potato chip or a dorito or a cheeto or a (I think I might be hungry).
When these cravings hit I discovered a quick and easy way to sqaush them with out having to sacrifice taste or feel guilty and you can make them yourself, so it's cheap and preservative free!
What is this magical snack savior? Kale Chips!!
Wait, come back! I know what you're thinking. I was hesitant to try them too, but once I did I was hooked. Eat them once & you'll be addicted too!
Here's my quick & easy Kale Chip recipe:
Ingredients:
One Bunch of Lachinato Kale
One Tablespoon of Olive Oil or Coconut Oil (my favorite)
1/4 Teaspoon of Sea Salt
1/4 Teaspoon of Fresh Cracked Pepper
Materials:
1-3 Cookie Sheets
1 Colander or Salad Spinner
1 Large Bowl
1 Pair of Scissors or Kitchen Shears
2. Cut each kale leaf into two strips by removing the mid rib. Then cut each strip into two inch pieces.
3. Wash the kale pieces using the colander or salad spinner. Use a paper towel to dry the kale if you don't have a salad spinner.
4. Place your clean, dry kale in a bowl and hand toss it with the oil, salt & pepper.
5. Arrange the kale on cookies sheets and bake them for 8-10 minutes until crispy. Watch them closely as they burn easily.
6. Move them to back into the bowl and try not to eat them all.
